Griddles and grill pans
Cast iron griddles and grill pans are flat or ridged cooking surfaces, thinner and wider than a skillet, made for pancakes, eggs, bacon, toast, and anything that benefits from a large, even heat surface. They ran from roughly the 1880s through the 1960s in American kitchens. Understanding how to inspect one for warping and wear matters more here than with almost any other piece of cast iron.

What a griddle or grill pan actually is
A cast iron griddle is a wide, flat cooking surface with little or no sidewall. The point is maximum contact between food and iron, with room to work. Griddles were a fixture in American kitchens from at least the 1880s and stayed in common production through the 1960s, covering wood stoves, gas ranges, and the transition to electric burners. A grill pan is a variation with raised parallel ridges cast into the cooking surface. The ridges hold food above pooled fat and, in theory, produce charred sear lines similar to an outdoor grill.
Neither form is a skillet. A skillet is designed to hold liquids and is relatively deep. A griddle is designed for dry or lightly greased cooking of flat foods: pancakes, johnnycakes, eggs, bacon, sandwiches, tortillas, and sliced vegetables. The thinness that makes a griddle useful for spreading heat across a wide surface is also what makes it the most warp-prone form in the cast iron catalog.
Sizes and variants
Griddles come in more configurations than most collectors expect. The most common forms are:
- Round griddles - A single flat disk, usually with one short handle. These range from small single-burner sizes up to pieces large enough to span two burners. The round form is the most common survivor.
- Long or oblong griddles - Rectangular or oval, intended to sit across two burners at once. These are sometimes called "long griddles" or "double-burner griddles." They are harder to find in unwrapped condition because the two-burner span puts uneven stress on the casting.
- Handled griddles - Any griddle with a single, integral cast handle, as opposed to a bail or side handles. Most round griddles fall into this category.
- Bale-handled or bail griddles - Some larger round griddles were made with a folding wire bail rather than a fixed handle, similar to a Dutch oven lid. These are less common.
- Grill pans - Round or square pieces with cast ridges. Square grill pans became more common in the mid-twentieth century, influenced by the popularity of backyard grilling. Older round ridged pieces also exist but are less frequently encountered.
- Reversible griddles - A double-sided piece with a flat surface on one side and ridges on the other. These are heavier than a standard griddle and span two burners. Quality varies considerably.
Sizing in vintage cast iron does not follow a single standard. Most makers used their own numbering systems, and a number 8 from one foundry is not the same diameter as a number 8 from another. Names worth seeking
Among American foundries, Griswold and Wagner are the most consistently praised for griddle quality, and collectors reliably seek them out. Both companies machined their cooking surfaces and, in many periods, their undersides as well. The result is a flatter, lighter, more responsive piece than most competitors managed.
Griswold's Erie, Pennsylvania operation produced griddles across a long span, and their examples generally show tight casting with minimal surface porosity. Wagner, out of Sidney, Ohio, is similarly well-regarded. Lodge, still operating in South Pittsburg, Tennessee, made griddles throughout the twentieth century and continues to do so. Vintage Lodge pieces are solid and plentiful, though generally heavier and less finely finished than Griswold or Wagner from the same era.
Several regional foundries also made creditable griddles. BSR (Birmingham Stove and Range, Alabama) and Favorite Stove and Range (Piqua, Ohio) both produced pieces that collectors find useful even if they do not command the same attention as the major names. Griddles to approach with caution are unmarked pieces from unknown origins, late-production pieces made after the major foundries declined in the 1960s and 1970s, and anything with very rough, unfinished cooking surfaces. Rough casting on the cooking side indicates either low-grade production or significant wear that has been covered with heavy seasoning.
What to look at first
Warping is the first and most important check. Place the griddle on a known-flat surface and press each corner or, for a round piece, each quadrant of the rim. Any rocking movement indicates a bow or twist. Then lay a straightedge across the cooking surface in multiple directions. A visible gap means the surface is not flat. A gentle crown or slight dip in the center is common and usually tolerable in use. A significant bow or, worse, a twist where opposite edges do not share a plane is a serious problem that cannot be fixed.
After flatness, check:
- The handle junction. Griddles are large, and the handle sees considerable leverage. Run a fingernail around the base where the handle meets the pan body. Any crack, however fine, means the piece is at risk of breaking in use.
- The cooking surface for deep pitting. Light pitting can be filled by seasoning over time. Deep, crater-like pitting means years of neglect or rust damage that may never fully smooth out.
- The edges and rim for chips. Small chips on the outer rim are cosmetic. Chips that extend onto the cooking surface matter more, though they are rarely structural.
- The underside for the heat ring or feet. Some griddles were made for specific burner sizes. A heat ring that does not match your stove's burner layout can cause the piece to sit off-center or rock during cooking.
- The overall weight, which you can compare to known examples. An unusually light piece for its size may indicate thin casting that is more prone to warping under heat.

Where they fail
Warping is so central to griddles that it deserves its own section. Cast iron warps when it is heated unevenly or cooled too fast. Griddles are especially vulnerable because they are thin and wide. A large flat piece has very little structural depth to resist the expansion forces of rapid heating. Running a cold griddle under cold water while still hot, heating it over a single burner without preheating gradually, or leaving it over a burner that is far smaller than the pan's diameter are all routes to a warped piece.
Grill pans face an additional failure point: the ridges. Ridges are the thinnest part of the casting and concentrate thermal stress. Cracks at the base or peak of ridges are more common on grill pans than cracks anywhere on a flat griddle. A hairline crack in a ridge may be cosmetic for a long time, but thermal cycling will eventually open it further.
Long two-burner griddles warp more often than round single-burner pieces, because getting two burners to heat identically is nearly impossible. The center of a long griddle, sitting above the gap between two burners, often gets less heat than the ends, creating uneven expansion.
Restoring a griddle

What is harder about a griddle than a skillet is managing it through the restoration process without adding new warping. Electrolytic tanks and lye baths are fine for griddles. Thermal methods, meaning putting a piece in a self-cleaning oven cycle to burn off old seasoning, carry more risk for a thin, wide piece than for a thick skillet. If you strip a griddle with heat, do it slowly and let it cool slowly.
Grill pans are harder to re-season evenly because the valleys between ridges are difficult to reach and tend to pool oil rather than coat it. Applying seasoning in very thin layers and wiping the valleys dry before the cure cycle matters more on a ridged surface than on a flat one.
A warped griddle cannot be straightened at home. Press or hydraulic methods can sometimes reduce a bow, but this work is specialized and not always successful. It is better to set a significantly warped piece aside for display than to try to cook on it and risk cracking it under thermal stress.
Griddles on a modern stove
Most vintage griddles were designed for wood or early gas ranges, where heat was more diffuse than on a modern gas or electric burner. On a modern stove, this mismatch shows up as hot spots directly over the burner and cooler zones at the edges.
The standard advice - preheat slowly over medium-low, let the heat spread before raising the temperature - applies more to griddles than to skillets. A griddle needs more time to equalize because it has more surface area relative to its thickness.
On electric coil burners, a round griddle sits fine, but a long griddle will have uneven contact with the coils. On smooth-top electric or induction ranges, warping becomes an even bigger problem because any bow in the base reduces contact and defeats the heating method. Truly flat vintage griddles work adequately on smooth-top ranges; warped ones do not work at all.
In the oven, griddles behave well. A flat griddle is a reasonable baking surface for flatbreads or as a pizza stone substitute, and it preheats faster than a thick piece because of its lower mass.
What they actually fetch
Griddles are among the more affordable pieces in vintage cast iron precisely because they are common and because warping scares off buyers who do not know what to look for. A flat, well-marked Griswold or Wagner griddle in good condition commands a premium over a generic or unmarked example. Long two-burner griddles are harder to find truly flat, so clean examples are rarer and correspondingly sought after. Grill pans occupy a middle range: common enough to be affordable but less universally useful than a flat griddle, which limits demand. The mistakes we see most
The most common mistake is buying a warped griddle because the price is low and the rest of the piece looks fine. A warped griddle is not a project, it is a limitation. The warp will not come out through seasoning or normal use, and attempting to correct it at home is more likely to crack the piece than to flatten it.
A close second is confusing a griddle lid with a griddle. Some Dutch oven lids are flat, self-basting lids that can double as a small griddle when inverted. They are not the same as a purpose-made griddle and are usually thicker, smaller, and without a heat ring designed for burner use.
Finally, some buyers overlook the heat ring question entirely and discover after purchase that their griddle rocks on their stove because the ring was sized for a range burner layout that no longer exists. How do I know if a griddle is too warped to use?
Set the griddle on a flat, known surface and press gently on opposite sides. If it rocks, it is warped. Then lay a straightedge across the cooking surface in several directions. Can I use a vintage griddle on an induction or smooth-top electric range?
A truly flat vintage griddle can work on a smooth-top range, though cast iron is heavy and dragging it can scratch the surface. The critical word is flat. Any warping that might be manageable on a gas burner becomes a real problem on a smooth-top, because the pan needs full contact with the surface to heat at all. On induction specifically, a warped griddle may not even be recognized by the burner. Test for flatness carefully before committing to a smooth-top pairing.
Why does my griddle have hot spots in the center and cool edges?
This is a geometry problem. Vintage griddles were often designed for wood or early gas ranges that delivered more diffuse heat than modern burners. A modern burner concentrates heat in a smaller zone than the griddle's diameter. The fix is a longer, slower preheat. Start on medium-low and give the piece ten minutes or more to equalize before raising the temperature.
